Oreo Stuffed Chocolate Chip Cookies

A real kid pleaser! A little surprise in the middle and what accompanies a cookies better than a cookie! Get your real cookie fix with these delicious oreo stuffed chocolate chip cookies!

These little cookie packages are so much fun for kids to make! I made these with some Costa Rican kids and they had a blast! They don’t get to “bake” very often so cookies are a huge treat!

Needless to say, we all loved them! We even used chocolate filled Oreos!

Recipe Card Border 2

Ingredients:

2 sticks unsalted butter, room temperature
3/4 cup packed light brown sugar
1 cup sugar
large eggs
1 Tablespoon vanilla
3 1/2 cups all-purpose flour
1 teaspoon salt
1 teaspoon baking soda
10-12 oz. bag semi-sweet chocolate chips
1 package Double Stuf Oreo Cookies

Directions:

1. Preheat oven to 350 degrees.

2. Add butter and sugars to a large bowl.  Beat until light and fluffy. Then add the eggs and vanilla and beat until combined.

3. In another medium sized bowl, mix the flour, salt, and baking soda with a wire whisk until combined. Slowly add the dry ingredients to the wet ingredients and mix until combined. Add the chocolate chips and mix until combined.

4. Place one scoop of cookie dough on top of an Oreo cookie. Place another scoop on the bottom of the Oreo. Press the dough together in your hand until the Oreo is completely covered. Shape into a thick patty. Repeat with remaining cookies and dough.

5. Place the stuffed cookies on the prepared baking sheet and bake for 11-15 minutes, until the cookies are cooked through. Let cool for 5 minutes and transfer to a cooling rack.

Amazing Cauliflower Sauce

Thick and creamy, loaded with garlic and flavor, this is the best pasta sauce you can choose! Not only because it’s healthy but super delicious as well!

We have found that we tend to eat quite a bit of pasta in Costa Rica. We think its because we go to the store less than we did in the States so we have more quick meals which end up being spaghetti.

Well time to switch it up! What better to do that with than Cauliflower Sauce!

It is the new Alfredo, after all.

Cauliflower Sauce - Prepared pan

Simply boil the cauliflower until it’s tender and then place in the blender. Add the garlic and butter to the mixture and blend until creamy.

Prepare a pan to add the sauce and noodles.

Add the sauce to the pan and heat until entirely heated.

Prefect consistency!

Reserve some sauce in another container if you are only making a small amount of noodles. Add the cooked noodles and heat!

Recipe Card Border 2

Ingredients:

8 large cloves garlic, minced
2 tablespoons butter
5-6 cups cauliflower florets
6-7 cups vegetable broth or water
1 teaspoon salt (more to taste)
½ teaspoon pepper (more to taste)
½ cup milk (more to taste)

Directions:

1. Saute the garlic with the butter until soft and tender. Be careful not to burn it!

2. Add cauliflower florets to a pot of boiling water or vegetable broth. Cook, covered, for 7-10 minutes or until tender. Do not drain the cauliflower

3. Add the cauliflower, garlic, 1 cup of broth (from the pot you boiled the cauliflower with), milk, salt, and pepper to a blender. Blend until creamy. You might want to do a few batches if there is too much sauce or cauliflower.

4. Add more broth or milk until it reaches the consistency you like. You can add olive oil to the mixture if you want a more smooth texture.

Serve warm!

Pancake Puff

 A delight to watch as this pancake puff inflates in the oven! This recipe gets a big WOW from everyone! Nothing like a fast quick breakfast that everyone loves!

The recipe with a ton of different names. Of course! Pancake Puff – Dutch Babies – German Pancakes

This well loved recipe was first introduced to me by my sister-in-law. What a fun way to have breakfast! We love making pancake puff for our Costa Rican friends, they love watching it inflate in the oven!

Oh, whoops! I let the secret out… Yes, this pancake will inflate in the oven. It’s so fun!

Pancake Puff - butter

When we made this with our friends they were trying to pronounce “Pancake Puff” One of the guys was quietly repeating it to himself all night long. When he felt like he was getting it, he would say it loudly.

So all night we were coaching them on the accent and how to pronounce “Pancake Puff” It was so funny!

Pancake Puff - Melted Butter

Start by melting the butter in a 9×13 pan. You can melt it in your pre-heating oven while you make the rest or just simply melt it in the microwave.

Next, whip the six eggs. Add the vanilla, milk and a pinch of salt to a medium sized bowl.

Add the flour to the milk mixture. Then add the mixed eggs. You can add cinnamon for flavor if you would like.

The mixture will be lumpy but try and get most of the lumps out without over stirring too much. Add the dough to the pan with melted butter.

You can stir a little in the pan to mix the butter into the mixture.

(Costa Rican butter is not really butter *sniff) I buy the one that says butter and is the most expensive and it still comes out so yellow/margarine looking.

Put the pan in the oven at 400 degrees F for about 25-30 minutes.

The mixture will inflate quite a bit in the oven! It’s so fun to watch!

Once you remove the pancake puff from the oven, it will begin to deflate.

Pancake Puff - Sprinkle Powdered Sugar

While it is still hot and moist, sprinkle a healthy amount of powdered sugar on top. Serve warm with maple syrup.

Ingredients:

5 Tablespoons butter
6 large eggs
1 cup milk
1 cup flour
1 teaspoon vanilla
Pinch of salt

Directions:

1. In a 9×13 pan, place 5 Tablespoons of butter (melt in the microwave or place in pre-heating oven while you prepare the pancake mixture.)

2. Start with the eggs. Get your whisk out and mix six eggs together.

3. Add a cup of milk and a little vanilla for flavor.

4. Add the flour, a pinch of salt and mix everything together. Note: The mixture will be kind of lumpy

5. Pour batter into pan with melted butter.

6. Bake at 400 degrees F for 25 minutes or until golden brown on top.

7. Sprinkle with powdered sugar while it’s still warm and serve with maple syrup.

Simply Perfect Banana Bread

 A simply perfect classic banana bread recipe that comes together in no time! This moist banana bread is great since it uses ingredients that most have on hand! 

Simple Banana Bread - Piece of Home

I am a Banana Bread LOVER. I mean, really? Who isn’t? I love how fast banana bread comes together and I am so in love with my Coconut Banana Bread recipe that I hardly try any others.

This super classic is great for when I don’t have any yogurt on hand or just need a quick and easy banana fix.

Simple Banana Bread - Dough Mix

You really don’t even need a mixer for this recipe but I was in a hurry and didn’t mind cleaning the beaters.

Mash up all the bananas until it smooth-ish and gooey. I try to get most of the large lumps out but it doesn’t have to be perfect.

Add the butter to the bananas.

Next, add the eggs. I doubled this recipe so that’s why it looks like so much. I don’t think I have ever not doubled a banana bread recipe. It’s so easy, so I just make two!

Add the sugar to the mixture. The recipe calls for a cup of sugar. I usually always put about half a cup to cut back on the sugar (I doubled the recipe here though so I did use a cup), you choose!

Simple Banana Bread - vanilla

Vanilla is one of my absolute favorite ingredients in any recipe. Especially for banana bread. It’s a must! Mix that all together with the flour, baking soda and salt. Put in greased bread pans.

Ingredients:

3 or 4 ripe bananas, smashed
1/3 cup melted butter
1 cup sugar
1 egg, beaten
1 teaspoon vanilla
1 teaspoon baking soda
Pinch of salt
1 1/2 cups of all-purpose flour

Directions:

1. Preheat oven to 350 degrees F.

2. In a large bowl, mash together the bananas until smooth.

3. Add the butter, egg, sugar, and vanilla to the banana mixture. Mix well.

4. Add the flour, baking soda, & salt. Mix well and pour into greased bread pans.

5. Bake for 50 minutes or until no longer doughy in the center. Enjoy!

Carrot & Potato Wedges

Looking for a great side to add to your meal? The roasted carrot and potato wedges are just the thing! Anything roasted = happy day!

This is a great quick and easy side dish to any meal. Of course once you have some meat in your meal, this makes it the perfect “meat and potatoes” kind of meal.

Potato Wedges - Chopped

Start by wedging the potatoes and carrots.

Potato Wedges - With Spices

Add the seasonings, salt, garlic, and oil. I used a tupperware so I could shake it and get everything well coated.

I added the carrots at the last minute which is why they are not in the picture but don’t forget those yummy carrots. There is NOTHING like warm roasted carrots! DElicious!

You can dance around the house too while you are “shaking” your potatoes around. Or better yet, throw it to one of the kids to shake around!

Ingredients:

2 large Russet potatoes
2 large carrots
2 garlic cloves
2 teaspoon garlic salt
1 teaspoon paprika
1 Tablespoon Italian Seasoning
1/4 cup olive oil

Directions:

1. Wash and scrub the potatoes. Cut in half and then into wedges.

2. Scrub and peel the carrots. Cut in half and then into wedges.

3. Place carrots and potatoes into a large tupperware or plastic bag.

4. Add the garlic, garlic salt, paprika, italian seasoning, and oilve oil to the vegetables. Shake or stir well until evenly coated.

5. Place on a baking sheet and bake at 350 degrees F. for 30-40 minutes until tender and golden brown.

I was so excited about the results that I just HAD to make a template for all my readers! (you’re welcome!) PicMonkey has been the program I use for just about everything! It’s the best!

My mom has done a family newsletter for our family every holiday season and I was wanting to share a few things about this past year since it’s been really eventful for us. However, I did not want to ramble on about everything so I decided to do something that was more of a general review! Such a fun way to it!

Now all you have to do, is upload the template to a photo editing program such as PicMonkey and add your text! I added a few photos to mine too!

Mission Script – Married Section, Top 5/things we did in 2014, names
RNS Camelia– small text on 5 things and home section
Echelon – Everything Else

I kind of went font crazy, and that’s not all of them, but it’s a start! Most are fonts are found on PicMonkey and the others are Google Fonts. Have fun with this!

For the front of my holiday card, I used a different design incorporating this same coral color, which is (#ff3333) for those of you who need the exact color. I used the newsletter as the back of my card!

Banana Bread Oatmeal Bake

Lots of company and no time to cook? This easy banana bread oatmeal bake that tastes just like banana bread is a real crowd pleaser with little effort on your part!

There is nothing like family & friends for the holidays! Lots of company and guests! That means, hardly no time at all! This oatmeal bake can feed a crowd and leave everyone happy!

I love making oatmeal bakes the night before and all I have to do is pop it in the oven the next morning! LOVE that!

Start by mashing up a few bananas. This goes together so fast you’ll wonder how you didn’t know about this sooner!

Add the brown sugar and eggs.

Next, add the vanilla, baking powder, baking soda, cinnamon, nutmeg, and salt.

Mix that all together. Sure doesn’t look very appealing does it? Just wait!

Add the milk while gently stirring.

Measure out some old-fashioned oats and add them to the mix.

Chop up some pecans and add that to the mix as well!

Just like that! Pour it into a 9×13 and it’s ready for the oven!

Wait! Did you notice how little sugar goes in this? It’s plenty sweet too! This makes this delicious breakfast a great healthy start!

Oatmeal bakes are impossible to take good pictures of. Once you add the milk, it turns into one big brown sloppy mess. One delicious mess that is! So don’t worry, I didn’t eat this dry, I did add a little bit of milk before eating it. Yum!

Recipe Card Border 2

Ingredients:

3-4 medium bananas, mashed
⅓ cup brown sugar
2 large eggs
½ tsp salt
½ tsp vanilla
½ tsp baking powder
½ tsp baking soda
2 cups milk
2½ cups old-fashioned oats
¼ tsp cinnamon
⅛ tsp nutmeg
½ cup pecans, chopped

Directions:

1. Preheat the oven to 350 degrees F.

2. Mash the bananas until most of the lumps are gone. You should have about 1.5 cups.

3. Mix the mashed bananas together with the brown sugar, eggs, vanilla, baking powder, baking soda, cinnamon, nutmeg, and salt. Next, whisk in the milk, then stir in the oats. Chop the pecans and stir them in as well.

4. Spray the inside of a glass baking dish (9×13) with non-stick spray. Pour in the oat mixture. Cover with foil and bake for 30 minutes. Remove the foil and bake for another 15 minutes or until the center is solid and the edges are slightly golden brown.

Serve warm or refrigerate and enjoy cold!
