Easy Garlic Hummus

In the search for more healthy snack ideas, I decided to try my hand at hummus. My husband and I both love hummus but it is a never heard of thing here in Costa Rica.

Problem solved!

This easy garlic hummus is a snack that just draws me to the fridge. One of those things just calling my name saying, “Eat me.” I love that! I always struggle getting snacks and tend towards things that are processed.

Another problem solved. Yippie-skippy!

So, for all you hummus lovers out there, this is so easy you will be making it all the time. No need for special ingredients, this recipe is without tahini. Now you would think the flavor would be terrible without that yummy stuff but it’s an amazing alternative! Give it a try!

Start by adding the garbanzo beans and minced garlic to your blender (I added them to a bowl first so I could demonstrate better)

Oh, just remember, go crazy with that garlic. It’s the best flavor in the world! Add as much in as you like!

Add some olive oil.

Blend it all up until it’s creamy. Just like that, a snack waiting for you! (and hopefully calling your name)

Ingredients:

15 oz can garbanzo beans, drained and rinsed
5-6 medium cloves garlic, peeled and roughly chopped
2 Tablespoons lemon juice
1/4 cup olive oil
1 tsp cumin
1/2 tsp paprika, plus more for garnish
1/2 tsp cayenne pepper (optional)
pinch of salt

Directions:

1. Drain and rinse the garbanzo beans.

2. Add the beans and the chopped garlic to the blender.

3. Add the olive oil, cumin, paprika, cayenne pepper, and salt.

4. Blend until creamy and thick. Serve with vegetables, crackers, and pita bread.

I’m a goner. Hook and sinker. There is just something so addicting about super soft and chewy cookies. The flavor of eggnog mixed with nutmeg has holidays written all over it. It’s fabulous!

You have to make them for your next holiday party! I know they will be a huge hit!

Soft & Chewy Eggnog Cookies            Print Button 50

Recipe Card Border 2Yield: about 24 cookies

Ingredients:

3/4 cups butter
1 cups sugar
1/4 cup eggnog
1 egg
1 tsp vanilla
2 and 1/2 cups flour
1/4 tsp salt
1 tsp baking soda
1/2 tsp cinnamon
1 tsp ground ginger
1/4 tsp cloves
granulated sugar

Directions:

1. Cream the butter and sugar until light and fluffy.

2. Add the eggnog, egg and vanilla to the sugar mixture. Stir until well combined.

3. In a medium bowl, mix together the flour, baking soda, cinnamon, ginger, cloves, and salt. Gently add to the wet ingredients while stirring.

4. Scoop about two tablespoons of dough and roll into a ball. Roll the ball into sugar until evenly coated.

5. Bake for 10-12 minutes at 350 degrees F. Allow to cool 5 minutes before serving.

Chocolate Chip Skillet Cookie

With a to die for crust like this, this chocolate chip skillet cookie just oozes with chocolate and satisfies like nothing else can!

No words. I literally have no words to describe how ahhh-mazing this cookie is! For one, the word cookie, one BIG cookie. As in, I ate almost ate the whole thing.

You just have to make it to have this experience. One cannot live life without having eaten a skillet cookie. It’s just not possible.

Have I convinced you yet!? Now get in the kitchen and start baking!

Sigh* I can dream about these all day! This batter is super fun to play with too!

Start out with your butter and sugars. Mix them all together until light and fluffy.

Next, add your egg and vanilla.

Give it all a whirl until well combined.

Next add in the flour, baking soda, and salt. Mix it until well combined.

Throw in the chocolate chips. Now really measuring isn’t necessary here. We know how much or how little chocolate we like. Just eyeball it. I tend to have a big eye for chocolate chips!

Next, lick the beaters. Hello! We are baking cookies here, that’s a must! Sharing them is the best too so wander out and find your husband or kids and give them one. They’ll love you.

Choose your cast-iron skillet and butter it up. I used a smaller one because it was just the two of us. I just used half the batter and froze the rest for another time!

It’s a great idea because you have cookie dough ready in a pinch!

Add the cookie dough to the skillet and spread around until evenly spread and edges are touching all around the skillet.

Throw the whole thing into the oven and get ready for the best cookie you will have had in your ENTIRE life!

Ingredients:

10 Tablespoons butter, softened, divided
1/2 cup sugar
1/2 cup packed brown sugar
1 large egg
2 tsp. vanilla extract
1 1/4 cups flour
1/2 tsp. baking soda
1/2 tsp. salt
1 cup semi-sweet chocolate chips

Directions:

1. Preheat oven to 350 degrees F.

2. In a medium bowl, mix together 8 Tbs of butter, sugar, and brown sugar until light and fluffy.

3. Add in the egg and vanilla. Stir until well combined.

4. In a separate small bowl mix together the flour, baking soda, and salt. While mixing, gently add the flour mixture to the wet ingredients.

5. Once mixture is well combined, add the chocolate chips, mixing until well incorporated.

6. Grease a 9-inch cast iron skillet with the remaining 2 Tbs. of butter. Place the cookie dough in the pan a spread evenly until the dough is touching all the edges of the skillet.

7. Bake for 20-25 minutes or until edges are browned. Remove from oven. Serve warm with whipped cream or vanilla ice cream.

They are the best! I LOVE how mine is so seasoned, I can cook anything in them! I’ve learned that I won’t use it if I store it away. I use it as my only skillet (well I have two of them) and I just leave them on my stove so I have easy access.

Now, I’m not scared of them anymore! And I can make cookies!

Sweet & Sour Tilapia

The best way to bring a zing to your fish! Sweet & Sour Tilapia is a burst of sass and a dash of sweet!

I am always looking for ways to add something special to tilapia. It’s such a juicy perfect fish to make! Tilapia has just always been one of my favorites! I had some homemade sweet & sour sauce left over from my Cauliflower Nuggets so I decided to add it to the tilapia!

Surprise! Ahhh-mazing! Check it out!

Add the tilapia to a heated oiled pan.

Sweet & Sour Tilapia - Fish

Thinly slice some carrots, bell pepper, and onion. Gently saute until tender.

Sweet & Sour Tilapia - Vegetables

Mix the vegetables in with the sweet and sour sauce and scoop a portion onto the cooked tilapia.

Sweet & Sour Tilapia

Ingredients:

4 tilapia fillets
1 cup carrots, thinly sliced
1/2 cup red bell pepper, thinly sliced
1 small onion, diced

For the Sweet and Sour Sauce:

1 tbsp cornstarch
2 tbsp water
2/3 cup vinegar
1/2 cup brown sugar
2 tbsp ketchup
2 tsp soy sauce

Directions:

1. Place the tilapia fillets into a well greased heated pan. Cook on low until no longer pink and flaky.

2. Thinly slice the vegetables. Add to a heated pan and saute until tender.

3. Prepare the sweet & sour sauce by adding the vinegar, brown sugar, soy sauce, and ketchup. Heat in a sauce pan until boiling. Mix together the cornstarch and water and add to the mixture. Heat until thickened.

4. Add the sauteed vegetables to the sweet & sour sauce. Scoop on top of the cooked tilapia. Serve warm.

Pizza Quinoa Bites

Give a new healthier meaning to Pizza night! These pizza quinoa bites are packed with flavor and have all the attributes of pizza that everyone loves!

I honestly have not cooked much with quinoa. I know, I know, there are SO many good things about it and it’s yummy! My husband is a HUGE fan of quinoa so I am pledging to make more dinners with quinoa. Hold me to it guys!

A few weeks ago I shared a great Cauliflower Nuggets recipe. This week I am sharing these! They are basically the same, just a different base! I love throw together recipes like this and I know you will LOVE this one! Give it a try, even if it’s your first time trying quinoa.

Start by adding together all of the spices. The red pepper flakes are optional here but nothing says pizza like a little spice!

Next spread the pizza sauce all around. Oh wait, actually this time all you have to do is dump it in! See! It’s easier than making a pizza. Whaaa??

I added some sausage we had laying around because hello, Meat Lovers! I want to feel like I’m ordering my own pizza here so add in those toppings you like! Throw in some olives or whatever topping is your favorite too because after all this is YOUR pizza!

Add the cooked quinoa and mix it all together.

Now add the egg so it gets all sticky and wants to stick together! This is the “crust” right?

Bake for 12-15 minutes in the oven. Top with cheese or more toppings and broil until crispy but careful not to burn them! Have a great pizza night!

Quinoa Pizza Bites

Ingredients:

1 cup cooked quinoa
½ cup shredded cheese + 2 tablespoons of cheese
1 egg
1 teaspoon salt
1 teaspoon ground pepper
3 tablespoons of marinara sauce
1/2 cup diced sausage meat (or pepperoni), cooked
½ teaspoon garlic powder
3 teaspoons italian seasoning
1 teaspoon crushed red pepper flakes
1/4 cup diced olives (optional)
Marinara Sauce, for dipping

Directions:

  1. Preheat oven to 400 degrees F.
  2. Mix ½ cup uncooked quinoa, washed, with 1 ¼ cups water and a pinch of salt. Bring to a boil then lower the heat. Cook the quinoa about 15 minutes until fluffy. You should get about 1 ½ cups of cooked quinoa.
  3. Grease a 12 mini muffin tin pan.
  4. Mix spices, cheese, marinara sauce, egg, meat, olives, and quinoa together.
  5. Put a tablespoon into each muffin tin, packing them in.
  6. Bake for 12-15 minutes.
  7. Remove from oven and top with remaining 2 tablespoons of cheese. Broil for about 1 minute.
  8. After broiling, allow to cool on a wire rack for about 15 minutes and then remove from pan.
  9. Serve with Marinara Sauce.

Such an amazing and easy combination! This smoothie is very often our lunches when we are busy blogging away and there is no time for a meal. A great way to get your protein in and feel full until dinner!

Ingredients:

2 large bananas, frozen
1 teaspoon vanilla
1/2 teaspoon cinnamon
2-3 Tablespoons of Hemp Powder
1/2 cup water
2 Tablespoons Cocoa Powder
2 handfuls fresh spinach
3-4 ice cubes

Directions:

1. In a blender, add together the frozen bananas, water, vanilla, hemp powder, cinnamon, and cocoa powder. Blend until smooth. Add more water if needed to get the consistency you like.

2. Add the handfuls of spinach to the blender along with the ice cubes.

3. Blend again until completely smooth. Enjoy!
