Shrimp Pasta with Spinach & Tomatoes in Garlic Butter Sauce

 A great one-pan dinner that is smothered in a rich and delightful garlic butter sauce! 

Shrimp Spinach Pasta in Pan Piece of Home

Usually around our house, shrimp is one of those things that gets fought over. There are never enough shrimp kabobs, never enough shrimp in the dish, etc..

Eyeballing the one at the table who might be taking one to many… Yes, everyone is secretly counting.

Make no exception for this meal! This is one of those its-so-good-don’t-take-more-than-your-fair-share kind of meals.

Seriously, it’s that good!

Shrimp Spinach Pasta Tomato

Make room in your weekly night menu for this quick family dinner. Personally, I think it’s the perfect romantic dinner. You could print this out and casually drop it on your hubby’s dresser. You never know, you might get a romantic dinner or picnic for two out of it!

Shrimp Pasta with Tomato & Spinach in Garlic Butter Sauce is so easy, even he can make it! It’s one of those meals that makes you feel like a chef! Everything fresh, simple, and healthy!

Shrimp Pasta with Spinach & Tomatoes in Garlic Butter Sauce Print Button 50

Recipe Card Border 2

Ingredients:

1 pound fresh shrimp, uncooked, shelled and deveined
5 medium tomatoes, fresh, chopped into large cubes
1 cup cooked fresh spinach, chopped
6 garlic cloves, minced
3-4 tablespoons butter
1 tablespoon olive oil
1/4 of a small lemon, juiced
pinch of salt
sprinkle of paprika
1/2 teaspoon crushed red pepper (or more)
10 oz spinach fettuccine pasta, cooked and drained

Directions:

  1. Heat a large skillet on medium-high heat, add 1 tablespoon butter and 1 tablespoon olive oil until melted. Add fresh shrimp and half the minced garlic. Cook for 1 minute on one side until pink on that side. While it’s cooking, sprinkle paprika and salt over uncooked side of the shrimp. Flip the shrimp over and cook for another 1 or 2 minutes until pink on the other side.
  2. To the skillet with shrimp, add chopped tomatoes, spinach, and remaining minced garlic. Add 1/2 teaspoon crushed red pepper (or more). Mix everything well, remove from heat.
  3. Meanwhile, cook noodles according to package instructions. Drain and rinse with cold water to prevent pasta from getting sticky.
  4. Add pasta to the skillet with shrimp and vegetables with 1 or 2 tablespoons of butter. Add freshly squeezed lemon juice about 1 Tablespoon. Season with salt and more crushed red pepper. Warm on medium heat until dish is completely heated.

Enjoy! This is a great one-pan family dinner!

I’m sure that I’m not the only one out there who loves those terrible sugar cookies with like a cup of frosting on each cookie. You know the ones I’m talking about right? The Lofthouse brand? Yeah… pretty good stuff!

But not as good as these!

This is such a simple and perfect happy ending to a cookie who really deserves it! I can’t get enough of how simply perfect these are!

Those are the kind of recipes I love! Simple and so satisfying!

Sugar Cookies with Sprinkles

Soft-Baked Sugar Cookies Print Button 50

Recipe Card Border 2

Ingredients:

1/2 cup butter, softened
3/4 cup sugar
1 egg
1 teaspoon vanilla
1 and 1/2 cups all-purpose flour
1/4 teaspoon salt
1 teaspoon baking powder
1/2 teaspoon baking soda
1 teaspoon cream of tartar
sprinkles for garnish

Directions:

1. In a large bowl, cream the softened butter and sugars for about 1 minute on medium speed until light and fluffy.

2. Mix in egg and vanilla. Set aside.

3. In a medium size bowl, whisk together the flour, salt, baking powder, baking soda, and cream of tartar.

4. Slowly add the dry ingredients to the wet ingredients. The dough will be thick.

5. Scoop dough, about 2 Tbs, and roll into balls. Add sprinkles to the top of each ball dough.

6. Chill the balls of dough on the cookie sheet for at least 2 hours. This keeps the cookies from spreading in the oven.

7. Preheat oven to 350 degrees F. Line two large baking sheets with parchment paper.

8. Bake chilled cookie dough for 8 minutes. The cookies will appear very soft and doughy. Allow the cookies to cool on the cookie sheets for 3 minutes and move to wire rack to cool completely.

7 Minute Artisan Bread

This loaf of delicious artisan bread won’t be around long, the amazing smells it gives off in the oven is enough to make your mouth water!

Just the name Artisan Bread has my mouth drooling! This is why I DO NOT make bread folks!

Yum! Just. Yum.

Artisan Bread - Rising Yeast

The smell of yeast growing and bubbling, the smell of fresh bread! Ahhh…

This was such an easy fun recipe that I know it will be my go-to bread recipe from now on. It’s just that perfect!

Start by letting the yeast sit, mixed with warm water and sugar, for about 5 minutes until bubbly.

Artisan Bread - Rising Dough

Add the rest of the ingredients and leave it in a warm place to rise.

I was so surprised to see how easily this dough had risen and how perfect it seemed! This is a great confidence booster to bread makers out there! It’s just one of the easy, perfect, recipes!

Artisan Bread - Prepare Pan

In the meantime, take a piece of parchment paper and trace the bottom of your deep aluminum pan. Sprinkle a little flour on the bottom, then place the parchment paper in the pan. Sprinkle a tad bit more flour on top of the paper to hold it down.

Artisan Bread - Kneaded Dough

Knead the dough and generously coat with flour shaping into a ball shape.

Artisan Bread - half loaf

Let the dough rest in the prepared pan another 30-40 minutes. Score the bread, then bake for about 30 minutes with the lid on. Remove the lid and bake for another 15-20 minutes or until golden brown on top.

*Note: I did not have success scoring my bread because I am using terrible knives. I’m looking into getting a Bread Scorer which should make things so much easier!

Ingredients:

1 ⅓ cups warm water
2 ¼ teaspoons granulated yeast (1 pkg)
1 teaspoon salt
1 tablespoon sugar
2 tablespoons olive oil
1 tablespoon fresh finely chopped herbs
3⅔ cups all-purpose flour

Directions:

  1. Add warm water to a large bowl. Stir in yeast and sugar and let sit for 4-5 minutes till mixture begins to bubble a bit and get foamy.
  2. Add remaining ingredients and stir with a  wooden spoon. Stir until all flour is mixed in.
  3. Cover bowl loosely with plastic wrap and allow to rest at room temperature until dough rises, 45- 1 hour.
  4. While the dough is rising, take a 3-4-quart pot and trace the bottom onto parchment paper. Cut out the circle.
  5. Sprinkle the bottom of the pan with 2 teaspoons of flour.  Fit the parchment paper circle you cut out into the bottom of the pan and sprinkle another teaspoon of flour on top of the paper. This will keep your bread from sticking to the pan and parchment paper.
  6. On a dinner plate place 1/4 cup of four. After dough has risen and collapsed, dump it out onto the floured plate. Flip several times to generously coat dough with flour.
  7. Shape into a smooth, flat ball by stretching and tucking the top. Dust with more flour from the plate as needed to prevent stickiness, but don’t try to incorporate a lot of extra flour into the dough.
  8. Preheat oven to 400˚F.
  9. Transfer the ball of dough to the prepared pot and cover with lid. Let it rest for 30-40 minutes or until doubled in size.
  10. Remove cover and sprinkle top of dough lightly with flour.
  11. With a sharp knife or bread lame make parallel cuts, 1½ inches apart across the top of the loaf.
  12. Place pot in oven with the cover on. Bake for 30 minutes, then remove cover and bake another 15-25 minutes, or until bread is golden brown.
  13. Allow to cool on a cooling rack, uncovered for 15 minutes. Remove bread by inverting onto a cooling rack. Flip over and let cool.

Apple Pizza

Nothing like pizza for breakfast! A fun way to get your morning started with Apple Pizza topped with warm, soft, cinnamon apples!

Ingredients:

1 cup oats
1 egg
1/4 cup apple sauce or plain Greek Yogurt
1/8 tsp. vanilla extract
1/4 tsp. cinnamon
1/4 tsp. nutmeg

Toppings:

1 apple, sliced and softened in microwave with cinnamon
1 Tbsp. chopped pecans
2 tsp. shredded coconut
2 Tbsp. greek yogurt
or 1/4 cup Streusel with Glaze

Directions:

1. Preheat oven to 350 degrees.

2. Combine ingredients except the toppings in a bowl.  Mix well and place on a cooking sheet lined with parchment paper.  Spoon and shape into a circle crust shape. Bake for 10-15 minutes, or until crust is golden brown.

3. Add toppings onto crust. Serve warm.
