Homemade Cinnamon Rolls

A cinnamon roll with the softest, melt-in-your-mouth dough with just the right amount of cinnamon. This is truly a Cinnabon Cinnamon Roll Copycat, delicious!

Cinnamon Rolls. Sigh… It’s just one of those love at first sight kind of things. I’m a HUGE cinnamon roll fan. Who isn’t!? The super soft cinnamony (is that a word?) bread smothered in cream cheese frosting.

To.Die.For. Have I convinced you yet? You MUST make this. And if you share with you friends you don’t have to worry about having all those extras in the house.

Cinnamon Roll Add Yeast

This is a very easy recipe and I was so glad because I was teaching a friend for her first time how to make cinnamon rolls and easy is always better when teaching someone else! It takes a lot more time than my Easy Cinnamon Rolls but this is the real deal. I still love my easy cinnamon roll recipe but there is nothing like homemade super soft bread!

Just start by scalding the milk with the butter and sugar. You don’t want to boil it or it can give it a bad taste. Just almost boiling. Place the milk mixture in a large bowl and let it cool, about 20-30 minutes then add the yeast. If it’s too hot it can kill the yeast so make sure it’s just warm to the touch but not hot.

Once the yeast has activated by appearing bubbly, add the flour, baking soda, baking powder and salt. Mix until its all well incorporated. The dough will be very sticky!

Place a tea towel over your bowl and let it sit in a warm place for about an hour until it rises.

This is the view we had while the dough was rising. My friend has a kitchen with this view! It’s gorgeous and they get to watch the sunsets every night! Just breathtaking!

Remove the dough and place onto a well floured surface. Add a cup of flour or more and knead into the dough until it forms a ball. Sometimes I have to add quite a bit more flour to be able to handle it without it being super sticky.

I let my friend do this part and she had a blast as you can see. She was laughing because this dough is so soft and fun to play with!

Split the dough into two parts. Flour your rolling pin and roll each part into a rectangle about 24×16. Spread the melted butter all over the dough making sure to get the edges well.

Next, cover generously with brown sugar and cinnamon. It should look pretty amazing!

Now start rolling! This is the fun part!

You can place a little water on the final lip of the dough to seal it to the log. Just dab a little on your finger and slide it along the edge to seal it.

Using a really sharp knife or dental floss, cut each cinnamon roll about 2 inches wide. Place onto a greased baking sheet.

Put them in a warm place to rise about 20-30 minutes.

Bake for 15-20 minutes at 400 degrees F. These cinnamon rolls are the best cinnamon roll recipe you will find! As I always say, easy as long as you plan time!

Mix all the frosting ingredients together with a hand mixer until smooth. Smother the cinnamon roll with frosting and enjoy warm!

Here are the chefs enjoying the homemade cinnamon rolls right out of the oven! They were perfect! You can easily cut this recipe in half or freeze half because it makes a lot of rolls.

Yield: 36  Prep Time: 2 hours  Cooking Time: 15 minutes Total Time: 2 hours 15 minutes

Ingredients:

1 quart Whole Milk
1 cup Butter
1 cup Sugar
2 packages Active Dry Yeast, 0.25 Ounce Packets
8 cups All-purpose Flour + 1 Cup
1 teaspoon (heaping) Baking Powder
1 teaspoon (scant) Baking Soda
1 Tablespoon (heaping) Salt
Melted Butter
2 cups Brown Sugar
Cinnamon

Frosting:

1 bag Powdered Sugar
2 teaspoons Vanilla
1/2 cup Milk
1/4 cup Melted Butter
1/8 teaspoon salt

Directions:

1. In a large saucepan, melt together the milk, butter, and sugar. Almost bring to a boil then remove from heat. Pour the hot mixture into a large metal bowl and allow to cool until warm.

2. Add the yeast and let it sit until the mixture becomes activated. It should look foamy and bubbly.

3. Next, add the flour, baking soda, baking powder and salt. Mix until all the dry ingredients are well incorporated into the wet ingredients. The dough will be sticky.

4. Place a tea towel over the metal bowl and put it in a warm place to rise. Allow to rise about 1 hour or until doubled in size.

4. Pour the dough out onto a well floured surface. It will be pretty runny and sticky. Add 1 cup of flour and knead into the dough until it forms a ball. It should no longer be sticky at this time. Add more flour if it seems to be really sticky but not too much or the dough can become hard and more difficult to roll out.

5. Split the dough into two pieces. Roll each halves into a 24×18 rectangle. Melt some butter and spread all around the rectangle of dough making sure to get all the edges well. The amount of butter depends on how much you like. I used 1 stick for both but if you want to go all out, then you can use 1 stick for each rectangle.

6. Sprinkle generously with brown sugar and cinnamon until the dough is completely covered.

7. Roll each rectangle into a log starting with the longest side and working each side so it’s an evenly rolled log.

8. Using a piece of dental floss, gently saw side to side on the log, cutting each piece about 2 inches wide. You can also use a very sharp knife if that’s

9. Place each roll into a greased pan and place again in a warm place to rise. The rolls should rise a quarter to double the size. Give about 20-30 minutes to rise.

10. Pre-heat the oven to 400 degrees F and bake about 15-20 minutes or until golden brown. You may need to place on broil at the end to brown the tops.

11. Top with frosting and enjoy while warm!

*Freezing and Thawing Instructions:
It’s best to freeze the rolls, unrisen, in the pan. Cover them tightly with plastic wrap then when you are ready to use them, allow them to thaw and rise. Give the rolls about 30 minutes to thaw and let them rise in a warm place about 15-20 minutes. Then continue the normal baking and icing! This is great for making ahead of time!

Cherry Chocolate Cookies

Chocolate with a little tang! Cherry Chocolate Cookies are a great mix of everything sweet complimented by oats.

In an attempt to make some cookies that weren’t just all chocolate like Triple Fudge Chocolate Cookies or chocolate chips like the famous Chocolate Chip Skillet Cookie, I had to find a cookie with some fruit!

I needed to find a cookie that was the perfect sweet and rich yet tangy with a little kick. Now don’t get me wrong, these are still really sweet but according to my husband, nothing tastes as good as long as there is a little fruit in there.

This Cherry Chocolate Cookie was the perfect solution! I shared these with some of our local Costa Rican friends and they really enjoyed them! I’m glad otherwise we would have eaten the whole batch!

Prep Time: 15 minutes Cook Time: 10 minutes Total Time: 25 minutes
Yield: 36 cookies

Ingredients:

1 cup unsalted butter
1 cup light or dark brown sugar, firmly packed
2 large eggs
1 & 1/2 teaspoons vanilla extract
1 & 1/2 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon cinnamon
1/2 teaspoon salt
3 cups old-fashioned oats
1 cup dried cherries
8 ounces semi-sweet chocolate chips or chunks

Directions:

1. Preheat oven to 350 degrees F.

2. Mix butter and brown sugar together until smooth. Add the eggs one at a time, mixing after each addition. Add vanilla.

3. In a separate bowl, mix together flour, baking soda, cinnamon, and salt. Gradually add to the butter mixture until combined. Careful not to over mix. Stir in oats, dried cherries, and chocolate.

4. Drop by tablespoonfuls onto lightly greased baking sheets. Bake for 10 to 12 minutes, or until bottoms are lightly browned. Cool on pans for a 2-3 minutes, then remove to wire racks to cool completely.

I don’t know how many times I see a really yummy recipe like Nutella filled crescent rolls, or the Classic Chicken Bake and come to find out they used refrigerator crescent roll dough.

I don’t have any of that! I can’t buy any of that in Costa Rica. As in, NON-existent.

Maybe its a good thing… much LESS preservatives and things I can’t even pronounce in them!

I was so excited to find this yummy and not to mention super easy recipe for homemade crescent rolls. Not that I need a recipe like this in my house. But it’s teaching me to resist the temptation. Beacuse, who doesn’t love yummy warm bread right out of the oven. Oh yes, I love that!

Crescent Rolls with Honey

It has been so windy here which = ALLERGIES! Or as we like to say. Bad. News. Bears. Not cool!

So our “maybe” cure? Honey. I mean what better way to get your daily intake of honey than on a warm crescent roll. Count me in! Allergies be gone!

Please don’t let the yeast scare you away. I’ve always been so hesitant to bake with yeast but as long as you plan ahead, you will find this is so easy! I have no idea why I’ve been so timid before with yeast. These easy homemade crescent rolls are a great way to get some practice with yeast!

It’s. No. Big. Deal. –This is how we do!

Prep Time: 30 min. + 1 hour rising Cook Time: 15 min. Total Time: 1 hour 45 min
Yields: 32 rolls

Ingredients:

3 and 1/2 cups of flour
1 pkg fresh yeast (2 and 1/4 tsp active yeast)
1/3 cup water, warm
3/4 cup milk, warm
1 and 1/2 Tablespoon Sugar
2 large eggs
1 teaspoon salt
4 Tablespoons Butter, softened

Filling:

4 Tablespoons Butter, softened

Directions:

1. In a small dish, dissolve the yeast in the warm water. In a large bowl, mix flour, sugar, and salt. Add the yeast to the flour mixture and mix.

2. Add the eggs and milk. Mix everything together. Add the butter and knead the dough until soft.

3. Cover the dough with a cloth and place in a warm non-drafty area to rise. Allow to rise about 1 hour or until doubled in size.

4. Punch the dough down and divide into two equal parts. Form the dough into balls. Place onto a floured surface and roll into a 17 inch circle using a rolling pin. Spread about 2 Tablespoons of softened butter on the dough circle.

5. Cut the circle into 16 triangles. You can use a pastry cutter and cut just like you would a pizza. Start rolling each triangle into crescents. Start from the outside edge and roll. Place on a greased baking tray with the tip side down.

6. Let the rolls rise about 20 minutes. Melt the additional 1 and 1/2 Tablespoons of butter and brush the tops.

7. Preheat the oven to 400 degrees F. Bake for 15-20 minutes until golden brown. Allow a few minutes to cool.

Enjoy with your favorite jam, honey, or more butter!

Arroz con Pollo is a typical dish in Latin America infused with a delicious bold chicken flavor that everyone loves! This is a great one-pan meal that is ready in no time!

We never realized how much the locals LOVE Arroz Con Pollo until one night, one of our friends was having a birthday. Just to complete the story, on a regular basis as in like everyday, they eat rice and beans. We asked him what he want for his birthday and he right away said, Arroz Con Pollo.

Um… Don’t you have rice every day!!??

Well, Arroz Con Pollo is different. And it’s really delicious. So I could see where he was coming from!

Recipe Card Border 2

Ingredients:

3 cups rice, cooked
2 Tablespoons Olive Oil
3 cups chicken broth
1/2 small onion, diced
2 cloves garlic, minced
3 Tablespoons minced cilantro
1/4 cup red bell pepper, diced
2 cups chicken , cooked, shredded
2 cups spaghetti sauce
1 Tbs. Salsa Lizano or Soy Sauce
Optional Additions: corn, chopped green beans, peas

Directions:

1. In a medium saucepan, boil the chicken in water until no longer pink. Reserve the water to use for chicken broth.

2. In a large saucepan, heat olive oil until bubbling. Add the rice and stir until browned.

3. Add the chicken broth and stir. Cover and let simmer until rice is tender. About 20 minutes.

4. Meanwhile, prepare the rest of the ingredients. Shred the chicken, chop onion, dice bell pepper and mince garlic.

5. Once the rice is tender, add the chicken, onion, bell pepper, garlic, and sauces to the rice. Depending on how juicy you want the rice, you may want to add less or more spaghetti sauce to get the right consistency.

6. Heat on low until the rice is warmed evenly. Serve hot.

In Costa Rica, Arroz Con Pollo is always served with potato chips. We haven’t figured out why but that is the tradition! Some of the locals use different sauces that you wouldn’t be able to find in the States but this is the closest I’ve come to their recipe!

Crab Rangoon

I’ve known for practically my whole life that cream cheese mixed with anything = happiness. Crab meat with cream cheese baked in a thin wonton wrapper is one of those “anythings” that has that amazing quality!

I made my own wontons wrappers for these yummy baked crab rangoons! I though it would be hard but now that I’ve done it, I would totally do it again!

Recipe Card Border 2

Ingredients:

1/8 tsp garlic powder
1 8-oz package cream cheese
6 oz of imitation crab meat
2 green onions, thinly sliced
2 teaspoons Worcestershire sauce
1/2 teaspoon soy sauce
48 wonton wrappers
2 eggs, beaten

Directions:

1. Preheat oven to 425 degrees.

2. Combine garlic powder, cream cheese, crab, green onions, Worcestershire sauce, and soy sauce in a bowl.

3. Place 1 teaspoon of filling onto the center of each wonton skin. Brush the edges with beaten eggs and fold the wonton skin diagonally to form a triangle, pressing edges to seal. Create a crown by pulling both bottom corners together and sealing.

4. Arrange the rangoons on a lightly sprayed baking sheet and spray the tops with cooking spray. Bake for 12-15 minutes, just until golden brown.
